The original has closed, but he’s since expanded to two small, minimalist cafes in North Sydney and Pyrmont, each serving a considered menu of green-hued drinks and desserts – from slices of matcha chiffon cake and Swiss rolls filled with matcha cream to matcha lattes built to your specifications. The take-home powders and matcha gear – 100-prong whisks; bespoke bowls – are top-tier, too. Good to know: Peruse the shelves for ceremonial-grade matcha powder and whisks.
